Recently awarded #15 in the AFR’s top 100 Restaurants, this two-hat gem sits hidden in plain sight on the main street of Paddington. From farm to table, Fred’s honours sustainable produce and the people who farm it with former Chez Panisse chef Danielle Alvarez at the helm of the kitchen.

As Head Sommelier, you’ll be given the opportunity (and responsibility) to use your creativity, introduce new and unique offerings to the wine list and take charge of the wine program for one of Merivale’s most treasured venues. Working closely with the Restaurant Management and broader group Sommelier team, you’ll lead and inspire our floor staff and play a key role in ensuring the delivery of exceptional guest service we well as driving revenue and cost results.

A critical role with Merivale’s sommelier group, you’ll set the standard for world-class service and share your wine knowledge with esteemed guests to ensure their experience at Fred’s is one they’ll never forget.

To be successful in the role, we’re looking for a Sommelier with experience leading a team, working with extensive wine lists in a similar (high-end restaurant) environment.
