Mr Wong creates what is, in essence, a self-contained Chinatown, complete with dim sum kitchen, roast meats counter, downstairs banquet hall and a moody colonial dive bar that could have been plucked from the backstreets of Hong Kong.

Seating 240 people over two levels and serving up a selection of up to 80 dishes, it’s a big affair. Mr Wong is one of the largest restaurants in the Sydney CBD.

As Executive Chef of three Merivale restaurants – Establishment, Ms.G’s, El Loco and Mr Wong – Dan has cemented himself as one of Sydney’s most creative and fastest rising talents. Renowned for incorporating myriad flavours to his cooking, Dan’s influence on the Mr Wong & Ms G’s menu is delightfully apparent.


A Chef de Partie who can hit the ground running… the most important part for us is finding someone with the right amount of spunk – you need to be passionate, hungry – we’re talking career-wise, but appetite is always a good thing in the kitchen.
